Content: chickpea flour, rice paper, tapioca, coconut flour, sea salt.

How to make it:

  • Pour the mix in a deep bowl. Mix the dry ingredients. After that, add 20ml from oil of choice, then add 450ml sparkling water and mix well.
  • In a separate bowl mix 3 eggs and if you want, you can add 100g of white cheese or grated yellow cheese. Add everything to the mixture and stir well.
  • Put parchment paper on a baking tray, approximately 20 x 27 cm in size. Pour the mixture in the baking tray. The height should be about 3cm once the mixture is on the tray. If the baking tray is too big, the banitsa will be thinner.
  • To top it off, add some seeds by choice.
  • Preheat the oven to 180 degrees Celsius, with a fan. Use the bottom heating setting on your oven. Bake for 60 mins.
  • Once the banitsa is done, take it out of the oven and let it sit for 5 mins. After that, place it on a wire baking rack with the parchment paper, to cool down.
